Vegetarian Split Pea Soup

Split Pea Soup


1 lb Split Peas

1 small onion

1 clove minced garlic

2 large carrots (diced)

1/4 cup butter

Salt and pepper to taste

6 cups water + additional water


  1. Sort and rinse peas

  2. In a 6 quart pot, combine 1lb split peas, 1 small onion, 1 clove minced garlic, 2 large carrots (diced) and salt and pepper to taste, and butter, and cook while stirring till veggies become soft (about 10 min)

  3. Add water and bring to boil, reduce heat to low and simmer (covered) until peas are tender. Keep adding water as needed to get the soup to the right consistency.
