Tomato Bread (Pan con Tomate)

When tomatoes are in season, this is the perfect light and easy appetizer for any occasion.


  • 4 ripe tomatoes on the vine

  • 1 clove fresh garlic

  • 3 tbsp olive oil

  • sea salt

  • 1 baguette


  1. Using a box grater, grate tomatoes into a bowl

  2. Grate the garlic into the same bowl

  3. Mix in olive oil and salt and stir well

  4. Toast and slice up the baguette

  5. Dollop the tomato mix over the slices of toasted baguette
