Citrus Winter Salad
Ingredients:
6–8 cups greens of your choice (ie. arugula, baby spinach, romaine)
1 blood orange, peeled and sliced
2 oranges, peeled and sliced
1 red onion, peeled and sliced
1 grapefruit, peeled and sliced
3/4 cup nut/ seeds (walnuts, almonds, sunflower/pumpkin seeds etc)
Goat cheese or other soft cheese - optional
For the Salad dressing
1/3 cup olive oil
2 tbsp balsamic vinegar
2 tbsp dijon mustard
1/2 lemon squeezed
1 tbsp orange juice
2 tbsp maple syrup or honey
salt and pepper, to taste
Directions:
Peel first, then horizontally slice oranges and grapefruit into thin slices (and then slice in half again)
In a large salad bowl, add the mixed greens, followed by the oranges and grapefruit slices, red onion, and nuts/ seeds.
Using a whisk or fork, mix together all of the dressing ingredients in a small bowl. Pour over the salad and toss to combine.
