Chicken Cacciatore


Ingredients:


  • 2 1/2 - 3 pounds chicken

  • 2 tbsp olive oil

  • 1 1/2 cups sliced mushrooms

  • 1 medium onion, sliced

  • 1 clove garlic, minced

  • 1 14 oz can diced tomatoes (undrained)

  • 1 6oz can tomato paste

  • 3/4 cup manischewitz wine

  • 1 tsp sugar

  • 1 tsp salt

  • 1/2 tsp dried rosemary

  • 1/2 tsp dried thyme

  • 1/2 tsp dried oregano

  • 1.8 tsp black pepper

  • 1 tsp fresh parsley

Directions:


  • In a 12 inch skillet, cook chicken in hot oil for about 15 minutes, turning to brown evenly

  • Remove chicken, reserving drippings in the skillet

  • Add mushrooms, onion and garlic to the skillet. Cook and stir for about 15 minutes, or until vegetables are tender

  • Return chicken to skillet

  • In a medium bowl, combine tomato paste, undrained tomatoes. wine, sugar, salt, rosemary, thyme, oregano, and pepper. Pour over chicken in skillet

  • Bring to boiling, reduce heat, simmer covered for 30 -35 minutes

  • Sprinkle with parsely and serve over pasta or rice
