Vegetarian Split Pea Soup

About the Recipe


  • 1 lb Split Peas

  • 1 small onion

  • 1 clove minced garlic

  • 2 large carrots (diced)

  • 1/4 cup butter

  • Salt and pepper to taste

  • 6 cups water + additional water


  • Sort and rinse peas

  • In a 6 quart pot, combine 1lb split peas, 1 small onion, 1 clove minced garlic, 2 large carrots (diced) and salt and pepper to taste, and butter, and cook while stirring till veggies become soft (about 10 min)

  • Add water and bring to boil, reduce heat to low and simmer (covered) until peas are tender. Keep adding water as needed to get the soup to the right consistency.
