A nice big salad is the perfect way to start a dinner party

Ingredients
For the salad:
1 English cucumber, peeled and diced
2 red bell pepper, large-diced
1 yellow bell pepper, large-diced
1 pint cherry or grape tomatoes, halved
1/2 red onion, sliced
1/2 pound crumbled feta cheese
1/2 cup pitted kalamata olives
For the vinaigrette:
2 cloves garlic, minced
1 tsp oregano
1/2 tsp Dijon mustard
1/4 cup red wine vinegar
1 tsp salt
1/2 tsp pepper
1/2 cup olive oil
Preparation
Dice the cucumber, peppers, tomatoes and red onion and toss into a large salad bowl.
For the vinaigrette, whisk together the olive oil, garlic, oregano, mustard, vinegar, salt and pepper in a small bowl.
Pour the vinaigrette over the salad.
Serve the feta and the olives on the side so that those who wish, can add the ingredients in themselves
