About the Recipe

A nice big salad is the perfect way to start a dinner party


For the salad:

  • 1 English cucumber, peeled and diced

  • 2 red bell pepper, large-diced

  • 1 yellow bell pepper, large-diced

  • 1 pint cherry or grape tomatoes, halved

  • 1/2 red onion, sliced

  • 1/2 pound crumbled feta cheese

  • 1/2 cup pitted kalamata olives

For the vinaigrette:

  • 2 cloves garlic, minced

  • 1 tsp oregano

  • 1/2 tsp Dijon mustard

  • 1/4 cup red wine vinegar

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 cup olive oil


  1. Dice the cucumber, peppers, tomatoes and red onion and toss into a large salad bowl.

  2. For the vinaigrette, whisk together the olive oil, garlic, oregano, mustard, vinegar, salt and pepper in a small bowl.

  3. Pour the vinaigrette over the salad.

  4. Serve the feta and the olives on the side so that those who wish, can add the ingredients in themselves
