Sheet Pan Za'atar Chicken and Vegetables

Easy one pan dinner, super scalable to suit the size of any dinner party

Ingredients

  • Za'atar spice blend

  • Olive oil

  • 6 tbsp. fresh lemon juice, divided

  • Kosher salt

  • 8 chicken thighs

  • I pack turkey kielbasa

  • 1 lb. fingerling potatoes, halved lengthwise

  • 1 large broccoli/ cauliflower

  • 1 lb brussels sprouts, sliced in half

  • 3 shallots, sliced

  • Garlic

  • Lemon juice

Preparation

  1. In a large bowl add shallots, olive oil, salt, generous amounts of Za'atar seasoning, and a little lemon juice and maple syrup and mix well to make the marinade.

  2. In a large ziploc bag, pour in half the marinade, and add the chicken and the potatoes. Let sit for 15 - 30min.

  3. Chop up all of the vegetables, and the kielbasa (optional) and add them into the bowl with the rest of the marinade, and mix well.

  4. Preheat oven to 425 degrees

  5. Lay out aluminum foil over one (or if doubling, two) large sheet pan(s)

  6. Spread out the chicken and potatoes and veggie and kielbasa over the sheet pan so that everything is directly touching the pan

  7. Cook for approximately 35 min
