About the Recipe
Ingredients
2 1/2 - 3 pounds chicken
2 tbsp olive oil
1 1/2 cups sliced mushrooms
1 medium onion, sliced
1 clove garlic, minced
1 14 oz can diced tomatoes (undrained)
1 6oz can tomato paste
3/4 cup manischewitz wine
1 tsp sugar
1 tsp salt
1/2 tsp dried rosemary
1/2 tsp dried thyme
1/2 tsp dried oregano
1.8 tsp black pepper
1 tsp fresh parsley
Preparation
In a 12 inch skillet, cook chicken in hot oil for about 15 minutes, turning to brown evenly
Remove chicken, reserving drippings in the skillet
Add mushrooms, onion and garlic to the skillet. Cook and stir for about 15 minutes, or until vegetables are tender
Return chicken to skillet
In a medium bowl, combine tomato paste, undrained tomatoes. wine, sugar, salt, rosemary, thyme, oregano, and pepper. Pour over chicken in skillet
Bring to boiling, reduce heat, simmer covered for 30 -35 minutes
Sprinkle with parsely and serve over pasta or rice
