I recently served these for a spring inspired dinner party. The lemon zest is key, and is what makes these meatballs perfect for early spring where you want to make a comfort food feel flora, and optimistic that warmer times are coming.
Serve these with a dollop of homemade tzatziki sauce on top, and your guests will devour these in no time!
Greek Style Meatballs
Ingredients:
2 lbs ground beef or ground turkey
1 cup Italian style breadcrumbs
Garlic powder
Onion powder
2 tbs milk
2 large eggs
Salt
Pepper
Lemon juice
Zest from one Lemon
Oregano
Dried parsley
Crumbled feta cheese (optional)
Directions:
Directions should always be short and to the point.
Preheat oven or air fryer to 350 degrees
Add an equal ratio of breadcrumbs and milk into a large bowl to make a panade. Let the mixture sit for about 5 minutes.
Add in ground beef, eggs, all spices, lemon zest (freshly zested/ grated), the rest of the lemon juice from the recently zested lemon, and crumbled feta (optional) and mix well with hands
Roll into 1 inch diameter balls, careful not to roll them too tightly
Line out onto pan lined with parchment paper (if using oven) or place on air fryer basket
Cook for 20-25 min in oven, or 8- 12 min in air fryer
Squeeze more lemon on top, and serve with tzatziki sauce
